A Look Back - pre-fondant

It all began with Carter's first Birthday Party in 2006.  We didn't really have a theme, but I remember being excited about wanting to make a fun cake for the occasion.  Using a generic cake mix and lots of different candies, here's what I came up with......a jello filled Pool Cake.  




 I was happy with how it turned out at the time, but I couldn't imagine ever serving something like that now.

From there I began trying to top the cake from the previous year.  I tried my hand at shaped cakes and then got into themed parties which will have to be a whole other blog post.

I learnt the hard way with this cake - never try to make your own red icing.  I used the concentrated gel food colouring, but had to use so much to get the right colour that it made the icing taste bitter.  Thankfully I noticed prior to serving it and sent the hubby out for store bought Red icing.   It took me an extra hour to scrape off all the icing and re-ice but it was worth it, as no one was the wiser.
